About our new Head Chef
Born in Les Sables D'Olonne, in the Vendee region of France, Our Head Chef and Euro-Toques member, Dominique Dayot has been featured in The Bridgestone Guide: 100 Best Restaurants in Ireland, by John & Sally McKenna, the Georgina Campbell Guide and by food critic Lucinda O'Sullivan in the Sunday Independent for his outstanding cuisine at the Shelburne in Campile, Co Wexford.

Dominique is also enjoying a rapidly-growing reputation at the Garrison Restaurant in Leighlinbridge, Co Carlow. He sources all his ingredients locally and praises Ireland for the availibility of good quality fresh food. He buys his fish and seafood "off the boats" in Co Wexford each morning, and this ensures that every dish is as fresh as possible. He splits his time between Co Wexford and The Garrison Restaurant, providing an opportunity to experience first-class French cookery right here in Co Carlow.

Garrison Waterside Holiday Centre is based in Leighlinbridge, County Carlow, South East Ireland, on the main road route from Dublin to Waterford, between Carlow Town and Kilkenny City.
On the main Dublin-Waterford road (N9) take the Leighlinbridge exit and make for Main Street, in the centre of the village towards the bridge.
We are also near to the Arboretum Garden Centre, so you can combine your visit with a pleasant break in this historic and picturesque village.
